Prior to joining Red Lantern’s staff, Room Chef Phuc Dong owned and operated Tango Café as well as held several culinary and managerial positions at Cache Creek Casino Resort from 1995 to 2006. Now he works with up to eight other chefs in Red Lantern’s kitchen preparing superior Pan-Asian dishes for our guests.
Sous Chef Noi Cheungsomboun has been with Thunder Valley since its first year, helping to establish the Koi Palace (now Red Lantern) as one of the premier authentic Asian restaurants in the region. He has cooked for or owned Chinese restaurants, including the Thai House in Los Angeles, for nearly 30 years. He always strives to prepare a “very good and authentic” Asian cuisine for every customer – indeed, that defines his chef leadership at the Red Lantern.
Executive Chef Duane Luukkonen oversees every aspect of our culinary development, from procurement of fine locally sourced ingredients to the development of our menus.
Before coming to Thunder Valley, Stephen dazzled palates at Alexis Park in Las Vegas & the Embassy Suites Maui. Today, he makes sure that every dinner roll, Danish & wedding cake is as enjoyable to look at as it is to eat.
